Ube Base Steps
1. Gather ingredients and equipment for ube paste.
Gather the thawed ube, coconut milk, vanilla extract, sugar, evaporated milk, ube extract, your saucepan, measuring spoons and cup, a spatula, and a storage container. Once all these items are gathered, measure ingredients according to the steps above for ube paste.
2. Add ingredients to the saucepan.
Next, place the thawed ube, coconut milk, vanilla extract, and sugar in the saucepan.
3. Bring to a boil.
Cook this mixture over medium heat while stirring frequently until it comes to a boil.
4. Cook until thick.
While the mixture cooks, continue stirring but increase the frequency. Do this until the mixture becomes thick and a trail can be left behind when stirring with your spatula.
5. Stir in the ube extract.
When the mixture reaches the right consistency, stir in the ube extract.
6. Add evaporated milk.
Slowly pour ½ a cup of evaporated milk into the mixture until thick, yet still pourable. Add more evaporated milk if needed.
7. Heat through.
Heat through once you’ve added the proper amount of evaporated milk. This normally takes 1 to 2 minutes.
8. Place in a container and refrigerate.
Place your ube base in your sealable container then place in the fridge until ready to use. This recipe makes enough base for 8 – 10 drinks and can be kept in the fridge for 4 – 5 days.

The Ube Milk Tea Experience
When it comes to ube milk tea and the ube base you need to get started, there are a few places you can change things up. One of the biggest changes you can make, however, is using boba pearls instead. If you are a fan of boba pearls and boba tea, this is an easy switch. You can purchase boba to add to your ube milk tea or simply choose a simple recipe and make your own. If you prefer sweeter tea, honey is possibly the best way to go. While it’s listed as optional in this recipe, if you need the extra sugar kick, it will dissolve easier in the milk and leave you loving your drink.
